Ah, the coffee trend that caught on quicker than an espresso shot. This was definitely a “wait, does this really work?” because how could instant coffee, sugar, and water become such delicious foam? Now we’re happily drinking our words and making these as an afternoon, work from home pick me up and as big, overnight batches for the smoothest lattes all week.
You’ll Need
equal parts instant coffee, water, sugar
milk of choice
Combine the instant coffee, water, and sugar. Whisk until stiff peaks. Dollop over milk or mix in. That’s it!
Ok, ok, there are a few tips to help along the way:
- You have to use instant coffee. Regular coffee will not work. Instant coffee has a thickening agent in it that helps the mixture become whipped. That’s also why if you try this with a tea or other beverage, it won’t work without a similar thickening agent.
- That said, you can also use instant espresso instead for an extra kick.
- For 1, 8 oz. serving, we usually use 2 tablespoons of instant coffee, water, and sugar, though you can scale up or down depending on how strong you want your drink to be.
- You can make this ahead of time! This was an accidental win- I had made a bunch of whipped topping for this shoot and didn’t want it to go to waste. So I filled a pitcher halfway with milk, halfway with whipped topping (which was roughly 6 T of each ingredient) and let it sit in the fridge overnight without mixing. The next morning I gave it a quick mix and scooped out the leftover foam. It was somehow even smoother and easily the best latte I’ve ever had.
- Get fancy with infused milks. If you like jasmine, or cardamom, or rose lattes, experiment with infusing your milk to add more depth of flavor.
