I saw a picture of a radish and roast beef crostini on Pinterest awhile ago, and for the life of me, I could not track it down. But the idea was so tempting, I had to wing it. It’s definitely one that seems a bit strange, but all the textures and flavors pair perfectly together.
Fall Crostini
baguette slices (~1/4″ thick)
garlic butter
pesto
radish
roast beef
Preheat oven to 300. Coat each baguette slice with garlic butter and arrange on a baking sheet. Pop in the oven for 5 minutes. Once the garlic butter is nicely melted over the baguette slices, take the baking sheet out.
Smooth about a T. of pesto over each slice, layer with roast beef and a few radish slices. Put the baking sheet back in for another 15 minutes to crisp everything up, and presto pesto!
