I have never been a fan of lettucey salads. Amongst the litany of reasons why, they just aren’t satisfying to eat. But a cucumber salad? Oh ho ho. Nothing beats that crisp juiciness. This is the dish to make if you’re looking for a delicious way to cool down.
It’s just personal preference whether you want to go with ribbons or medallions for the cucumbers. I like using ribbons to fill out a plate when I want a meal and medallions when I want to eat them like fresh chips!
Cucumber Salad
cucumbers
rice vinegar
dash of salt
dash of sugar
toasted sesame seeds
red onions
red pepper or chili powder (optional)
- Thinly slice the cucumbers and onions. Transfer to a mixing bowl.
- Mix the rice vinegar, salt, and sugar together and drizzle over the cucumbers and onions.
- Plate and finish off with a dusting of toasted sesame seeds.
This recipe is really that simple. If you want to strip this down even further or quickly whip it together, you can skip the salt & sugar and drizzle the rice vinegar straight from the bottle onto a plate of cucumbers & onions. I definitely do this when I don’t feel like dirtying another dish and it’s still hella satisfying.
And if you want a dose of spiciness, you can add chili powder to the vinegar mix before drizzling or sprinkle pepper flakes on top with the sesame seeds.
